One Sheet Pan Longanisa and Butternut Squash Dinner
An easy way to prepare dinner on a busy night. You can even do meal prep by having the herbs chopped, the squash, sausages, Brussels sprouts, and red onion all cut a couple of days before. Make sure to cut your apples just before adding it to your sheet pan.
|1/3 cup||Olive Oil|
|3 tbsp||Fresh Sage, chopped|
|1 tbsp||Fresh Thyme, chopped|
|4||Garlic Clove, minced|
|2 tsp||Lemon Juice|
|6 cups||Butternut Squash, diced|
|1||Siwin Foods Hot Longanisa Cured Sausage 375 g package (Sausages cut in half)|
|2||Apples, medium diced|
|1 1/2 cups||Brussel Sprouts, washed, halved, and outer leaves removed|
|1 cup||Red Onion, chopped|
- Preheat oven to 400ºF.
- In a small bowl, combine the first 5 ingredients
- On a prepared baking sheet toss the next 5 ingredients together. Pour herb mixture over squash mixture and mix together. Bake in oven for 60-70 minutes, stirring halfway through.
