One Sheet Pan Longanisa and Butternut Squash Dinner

An easy way to prepare dinner on a busy night. You can even do meal prep by having the herbs chopped, the squash, sausages, Brussels sprouts, and red onion all cut a couple of days before. Make sure to cut your apples just before adding it to your sheet pan.

Ingredients

1/3 cup Olive Oil
3 tbsp Fresh Sage, chopped
1 tbsp Fresh Thyme, chopped
4 Garlic Clove, minced
2 tsp Lemon Juice
1 tsp Salt
1/2 tsp Pepper
6 cups Butternut Squash, diced
1 Siwin Foods Hot Longanisa Cured Sausage 375 g package (Sausages cut in half)
2 Apples, medium diced
1 1/2 cups Brussel Sprouts, washed, halved, and outer leaves removed
1 cup Red Onion, chopped

Instructions

  1. Preheat oven to 400ºF.
  2. In a small bowl, combine the first 5 ingredients
  3. On a prepared baking sheet toss the next 5 ingredients together. Pour herb mixture over squash mixture and mix together. Bake in oven for 60-70 minutes, stirring halfway through.
