One Sheet Pan Longanisa and Butternut Squash Dinner

An easy way to prepare dinner on a busy night. You can even do meal prep by having the herbs chopped, the squash, sausages, Brussels sprouts, and red onion all cut a couple of days before. Make sure to cut your apples just before adding it to your sheet pan.


Ingredients

1/3 cupOlive Oil
3 tbspFresh Sage, chopped
1 tbspFresh Thyme, chopped
4Garlic Clove, minced
2 tspLemon Juice
1 tspSalt
1/2 tspPepper
6 cupsButternut Squash, diced
1Siwin Foods Hot Longanisa Cured Sausage 375 g package (Sausages cut in half)
2Apples, medium diced
1 1/2 cupsBrussel Sprouts, washed, halved, and outer leaves removed
1 cupRed Onion, chopped


Instructions

  1. Preheat oven to 400ºF.
  2. In a small bowl, combine the first 5 ingredients
  3. On a prepared baking sheet toss the next 5 ingredients together. Pour herb mixture over squash mixture and mix together. Bake in oven for 60-70 minutes, stirring halfway through.
