One Sheet Pan Longanisa and Butternut Squash Dinner
An easy way to prepare dinner on a busy night. You can even do meal prep by having the herbs chopped, the squash, sausages, Brussels sprouts, and red onion all cut a couple of days before. Make sure to cut your apples just before adding it to your sheet pan.
Ingredients
| 1/3 cup | Olive Oil |
| 3 tbsp | Fresh Sage, chopped |
| 1 tbsp | Fresh Thyme, chopped |
| 4 | Garlic Clove, minced |
| 2 tsp | Lemon Juice |
| 1 tsp | Salt |
| 1/2 tsp | Pepper |
| 6 cups | Butternut Squash, diced |
| 1 | Siwin Foods Hot Longanisa Cured Sausage 375 g package (Sausages cut in half) |
| 2 | Apples, medium diced |
| 1 1/2 cups | Brussel Sprouts, washed, halved, and outer leaves removed |
| 1 cup | Red Onion, chopped |
Instructions
- Preheat oven to 400ºF.
- In a small bowl, combine the first 5 ingredients
- On a prepared baking sheet toss the next 5 ingredients together. Pour herb mixture over squash mixture and mix together. Bake in oven for 60-70 minutes, stirring halfway through.
